One of summer’s coolest cocktails, this frozen mojito is sure to add a zing to your holiday vibe.
80–100g brown sugar, to taste (depending how sweet you like it)
1/2 cup mint leaves, torn
3 limes; skin, pith and seeds removed
1/2 cup fresh lime juice
300ml white rum (Havana Club or Bacardi)
500g ice cubes
750ml soda water
Extra mint leaves and lime wedges to garnish
Place sugar and mint leaves into the Smeg blender jug. Pulse until mint is pulverised. Add limes, lime juice and rum and blend. Add ice one hand full at a time and continue to blend until ice is crushed. With motor running, slowly pour in the soda, reducing speed as the jug fills (so it doesn’t spill out). Pour into glasses and garnish with mint leaves and lime wedges. Serve immediately.
