Recipe:

Cauli Mash

If you are a lover of mashed potatoes, you probably can’t imagine giving up this staple. Think again – this delicious cauliflower mash will cheat the eyes and mind, and is one of the fundamentals of Banting.

Serves 6

Ingredients:

1kg      Cauliflower

300ml Milk

100g    Butter

Salt & Pepper as needed.

Method:

  1. Break the cauliflower into florets.
  2. Steam the cauliflower until it is mushy. (Never boil your veggies, this literally washes the nutrients away.)
  3. Using a stick blender or food processor, puree the cauliflower until smooth.
  4. Continue to puree, add the milk, then the butter and beat until smooth and silky.
  5. Season to taste and serve.
